Kohlrabi Fritters & Dill Yogurt

One of the ways that we played house as teenagers was by making elaborate Sunday brunches. We felt grown up and developed weaknesses for decadent food on weekend mornings. Since, we have adapted recipes we fell in love with then to make better use of our harvest. Kohlrabhi fritters are a light alternative to potato pancakes. Top them with Greek yogurt and luxuriate!

Prep Time: 15 minutes                   Cook Time: 20 minutes                   Total time: 35 minutes

Ingredients:

  • 1 C Kohlrabi leaves, thinly sliced         

  • 2C Kohlrabi bulbs, grated                     

  • 2 Eggs, lightly beaten                           

  • ½C Flour

  • Cooking Oil                                           

  • Scallions, thinly sliced                         

  • Dill, chopped                                          

  • Greek Style Yogurt

  • Salt and Pepper, taste

Instructions:

  • Squeeze as much liquid from the grated kohlrabi as possible.

  • Mix the grated kohlrabi, kohlrabi greens, eggs, and flour. Season.

  • Heat a shallow layer of oil over medium-high heat. Fry the batter, turning when golden. Small scoops, large scoops, or even one big pancake will work well.

  • Combine the yogurt, scallion, and dill. Season.

  • Serve as is or with smoked salmon, poached eggs, or sliced tomato…
